Cooking from Home: Scalloped pineapple, Nutter Butter truffles, peanut butter sugar

It's never too early for kids to learn how to cook or bake, but the process can be tougher than anticipated. Following these top tips will ensure that cooking with your kids is safe, fun, and well worth the mess.

Scalloped Pineapple

The recipe I used for this side dish came from the Moultrie County Homemakers Extension Association cookbook many years ago. This recipe is much like it. It's a good side to ham, or try it with pork or chicken.

½ c. melted butter1 c. white or brown sugar½ c. milk4 c. soft breadcrumbs3 beaten eggs1 28 oz. can crushed pineapple, undrained

Preheat oven to 375°F. Grease a 9-inch square baking dish or similar sized casserole dish.

Mix butter, sugar, milk and breadcrumbs. Add pineapple and eggs and stir until well blended.

Bake for 45 minutes until golden brown.

Nutter Butter Truffles

Of all of the truffle recipes out there, this is the only one I have used regularly for the holidays or for gifts. The easiest dipping tool I've found is a plastic fork with the middle tine removed.

Process cookies into fine crumbs. Mix crumbs with softened cream cheese. Roll into 1-inch balls.

In a shallow dish, melt chocolate in microwave at 30 second intervals until soft. Stir until smooth.

Dip centers in chocolate. Place on waxed paper. Top with sprinkles or peanut butter sugar. (Or let chocolate set and drizzle with melted dark chocolate.)

Let stand until set. Store in airtight container in refrigerator.

Peanut Butter Sugar3 T. creamy peanut butter1/3 c. powdered sugar1 T. white sugar

Combine all ingredients in a small bowl. Makes about ⅔ cup. Mixture can be frozen in a small airtight container.
